My strawberry beds are loaded with strawberries! Some of my grandkids and I enjoyed a hearty snack walking through the garden this morning. It’s Strawberry Season!

I taught them to pull the leaves back and find treasure!

It’s Strawberry Season! And I have a brand new recipe, from a sweet family member, that has become my favorite way to use strawberries! Strawberry Poppy Seed Salad!

The secret to this yummy salad is slicing the onions very thinly!

You also want to slice the strawberries like this – slice off stem area, set the base of the strawberry down and slice from tip to base!  It holds it’s shape and firmness in the salad as opposed to chopping in small pieces! It also looks so pretty!

Put this salad together just before serving – toss lightly and top with Poppy Seed Dressing! I use stevia instead of sugar for guilt free dining!

Strawberry Poppy Seed Salad


Description

This is a refreshing spring and summer salad!  It’s quick, simple and delicious!


Ingredients

Scale

1/2 cup mayo

1/4 cup milk

1/3 cup sugar (or one packet of Stevia)

1T white wine vinegar or rice wine vinegar

12 T poppy seeds (I use just 1)

2 heads of Romaine Lettuce

12 pints of strawberries

1 red onion ( I use 1/2 of a small onion…just add to your taste!)


Instructions

For the salad dressing: Place all ingredients into a bowl and whisk together. Set aside.

For the salad: Wash and chop the romaine lettuce, slice the red onion VERY thinly. Stem your strawberries and put the flat side down. Then thinly slice each strawberry from tip to base. Mix the salad ingredients together in a bowl. Top with the salad dressing just before serving.


Notes

I have added chopped pecans or pumpkin seeds or other seed/nuts of choice. You can also top with Feta cheese if desired! Add the dressing just before serving since it contains vinegar and may cause some wilting!
